1 box of rice noodles
large handful of grape tomatoes, sliced
1 large carrot, julienned
1/2 large zucchini, julienned
handful of cilantro, chopped
1 teaspoon toasted sesame seeds
dressing:
1/3 cup rice vinegar
1/3 cup soy sauce
1 1/2 tsp sesame oil
juice from one lime (and some zest if you want)
2 tbsp brown sugar
2 cloves minced garlic
red pepper flakes, to taste
Cook the rice noodles according to the package then drain and let cool. Splash on a little sesame oil to keep all the noodles from sticking to each other. When they're cool, add in the remaining ingredients and top with the dressing. I also think chopped peanuts would be good in it.
