taco salad with chipotle lime dressing



















via love and lemons
grilled corn + orange pepper:
1/2 orange pepper, diced
2/3 cup frozen corn

cherry tomato pico:
1/2 c. sliced tomatoes (cherry)
1/2 lime (1-2 tablespoons)
3+ sliced scallions, diced
handful of cilantro, chopped


chipotle lime dressing:
1/4 c olive oil
1/4 cup fresh lime juice (about 1 lime)
1 teaspoon ancho chile powder
1 teaspoon chipotle chile powder
1 tablespoon honey
salt, pepper, to taste

other salad components:
1 cup cooked quinoa
2 cups spinach
1 cup romaine
crushed tortilla chips

Toss corn and orange pepper in a skillet and saute with a little garlic salt until the pepper is tender. Set aside.

In another small bowl, toss together cherry tomatoes, scallions, cilantro, and salt. Set aside.

In yet another small bowl, whisk together the dressing: olive oil, lime juice, ancho chile powder, chipotle powder, honey, salt and pepper. Set aside.

Combine together the spinach and lettuce in a bowl and toss with the dressing. Layer on the quinoa, corn + peppers, pico de gallo, and then top with the tortilla chips. Eat.
