easy balsamic vinaigrette (and salad)














Balsamic Vinaigrette

1/4 cup balsamic vinegar
1/2 cup olive oil
2 teaspoons minced garlic
1/2-1 teaspoon salt (to taste)
1/2-1 teaspoon black pepper (to taste)
1 tablespoon good mustard (we use Jack Daniel's Old No. 7)

Put all ingredients into a half-pint mason jar. Shake vigorously. Done.

Salad for Two

2 cups shredded romaine
1/3 cucumber cut into thin rounds
1 carrot sliced cut into thin rounds
a large handful of grape tomatoes, cut in half
1/3 cup toasted sliced almonds
1/2 cup cooked quinoa
4 pieces cooked bacon, crumbled
a couple sprinkles of parmesan cheese

Split ingredients evenly between two bowls (pasta bowls are best). Top with as much dressing as you can handle.

(I add quinoa to salads cause the extra protein makes it more filling and meal-like, so if it's not the main course you can leave it out.)
