baked sweet potatoes + chipotle bean and corn salad

2 small sweet potatoes or yams, baked
1 can black beans, rinsed and drained
1 cup corn
3 green onions, thinly sliced
1/2 cup cilantro, chopped

1 lime, zested and juiced
1 tablespoon oil
1 teaspoons honey
1/2 teaspoon chipotle chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
cheese + greek yogurt

In a bowl, mix together the lime zest and juice, oil, honey, chipotle chili powder, salt and pepper. Add the black beans, corn, onions, and cilantro. Stir to combine. Slice open the baked sweet potatoes and stuff with the salad. Top with cheese or greek yogurt if you like.
