super simple brussels sprouts + tomato tortellini
1 lb. brussels sprouts
1/2 lb. grape tomatoes
6 oz. dried tortellini
juice from 1 lemon
parmesan, to taste
1. Preheat oven to 400°. Cut brussels sprouts and grape tomatoes in half and toss with olive oil, salt and pepper. Arrange in a single layer on a baking sheet lined with foil and bake for 15 minutes, flipping half way.
2. Meanwhile, boil water and cook tortellini according to instructions on the package.
3. Toss tortellini and roasted brussels sprouts and tomatoes together with a lemon juice. Top with parmesan and eat.
