cranberry + white chocolate no-bakes

via me

2/3 cup sugar
1/4 cup milk
1/4 cup butter
pinch of salt
1/2 teaspoon vanilla
1/3 cup almond butter
1 1/2 cups old fashioned oats
1/2 cup white chocolate chips
1/2 cup dried cranberries

Heat sugar, milk, butter, and salt in a saucepan over medium-high heat until butter is melted and it starts to bubble. Let simmer for about two minutes and remove from heat. Add almond butter and vanilla and stir until smooth. Add oatmeal, chocolate chips, and cranberries and stir until combined. Dropped by spoonfuls onto waxed paper and shape using a spatula (or your fingers) so they don't look like gloppy mounds. Let set for a half hour. Eat them all at once or store for up to two days.

Variations: 1/2 cup chopped dried apricots and 1/4 cup coconut, 1/2 cup dried blueberries and 1/4 cup chopped almonds, 1/2 cup dried strawberries and 1/4 cup mashed banana
